Ingredients for Mini Eclair Recipe

For the pudding:

  • 4 cups of milk
  • 1 cup granulated sugar
  • 5 tablespoons of flour
  • 1 tablespoon of starch

For the dough:

  • 100 grams of butter
  • 1.5 glasses of water
  • 4 eggs _
  • 1 cup flour (+2 tablespoons flour)

For the above:

  • 2 packs of chocolate (dark or milk)

How to Make Mini Eclair Recipe?

  • First, make the pudding and let it cool. Mix all ingredients until boiling. When it thickens, remove it from the stove and let it cool.
  • For the dough, put the oil in a pot and melt it. When the butter melts, add the water.
  • When it starts to boil, add the flour little by little.
  • Mix until combined.
  • Turn off the heat and add eggs one by one. Add each egg in turn and beat. After adding all the eggs, let it cool.
  • When it cools down, put it in a squeeze bag.
  • Squeeze it onto the baking tray intermittently. Put it in the oven, it should bake at 160 degrees for about 40 minutes.
  • Divide the cooked eclairs in half and add the pudding in the middle. Dip it in melted chocolate in a bain-marie and serve.
