How to Make Chicken Iskender Recipe?
- Combine the juice of the onion you previously grated and squeezed, yoghurt, curry, chili pepper, salt, black pepper, thyme, red pepper, garlic and cumin in a deep bowl and add olive oil.
- Mix until homogeneous.
- Place your chickens in the bowl and turn them upside down with your hands so that all the chickens are coated in the sauce. Cover it with a stretch film and let it rest in the refrigerator for 30 minutes. If you have time, it would be better if you keep it for about 8 hours.
- Add the oil to the pan and wait until the oil becomes hot. After the oil is hot, add the chickens to the pan so that they do not touch each other.
- Turn the chicken over and cook until both sides are browned.
- For the sauce, add the butter to a pot and add the tomato paste. After the smell of the tomato paste disappears, add salt and pepper and mix. After adding hot water and mixing, place it on low heat and close the lid.
- While waiting for the sauce, roast your tomatoes and peppers. You can roast it on the stove or using a charcoal burner.
- When you see that the sauce has reached its consistency, turn off the heat.
- Place the pitas in the pan where you melted the butter and fry them until they become crispy and brown.
- First place the pitas on a serving plate, then place the chicken, yoghurt, roasted tomatoes and peppers on top.
- After pouring the sauce over it, the chicken iskender is ready. Enjoy your meal!
