Chicken liver recipe is a delicious and economical alternative to Albanian liver prepared from lamb liver. A protein source sauté flavored with chopped onions, red bell pepper and parsley leaves.
With buttered rice pilaf on the side. Ok.
- 600 grams of chicken liver (with added heart)
- 4 tablespoons of olive oil
- 2 large size onions
- 1 medium sized red bell pepper
- 1/4 bunch of parsley
- 1 teaspoon tomato paste
- 1 teaspoon of salt
- 1/2 teaspoon cumin
- 1/2 teaspoon freshly ground black pepper
- 1/2 teaspoon chili pepper (optional)
How to Make Chicken Liver Recipe?
- Carefully remove excess fat and sinew from the chicken livers. After cutting the chicken hearts in half, clean the blood clots in the middle under running water.
- Drain the excess water from the heart and lungs, which you leave in a pot filled with cold water for at least 10 minutes to completely drain the blood. After drying them, divide the livers into two equal parts according to their size.
- Chop the peeled onions into thin slices. Cut the colorful bell pepper in half, remove its seeds, and cut it into half-moon shapes.
- Wash and drain the parsley leaves in plenty of water, then extract them one by one and chop them finely as desired.
- Add olive oil and heat in a wide-based pan. Add the spring onions and fry, stirring, until they turn a light colour.
- Then add the red peppers and continue the roasting process for a short while. Put the cleaned chicken livers into the pan and cook over low heat, stirring occasionally, until the water is absorbed.
- Add a small amount of tomato paste, salt, cumin, freshly ground black pepper and red pepper flakes if desired. Cook the chicken liver on low heat for another 4-5 minutes, then place it on serving plates.
- After decorating with cleaned parsley leaves, share it warm with your loved ones.
