Even though we are used to minced meat made from red meat, minced meat made from chicken meat has nothing left of it. There is even an area where it overtakes red meat: it is much more economical. We prepared a light meatball from chicken minced meat that won our hearts with its taste and budget-friendliness.

Ingredients for Chicken Meatballs and Sauteed Vegetables Recipe
  • 250 grams of chicken mince
  • 2 medium sized onions
  • 4 cloves of garlic
  • 1 red pepper
  • 1 green pepper
  • 6-7 pieces of asparagus
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon butter
  • 1 tablespoon olive oil
  • 7 sprigs of parsley
  • 1 egg _
  • 2 tablespoons of breadcrumbs
  • 1 teaspoon of salt
  • 1 teaspoon black pepper
  • 1 teaspoon cumin

How to Make Chicken Meatballs and Sauteed Vegetables Recipe?

  • Place the chicken mince prepared from breast meat into a bowl.
  • Finely chop 1 onion, two cloves of garlic and parsley or put them in a food processor.
  • Then add these vegetables into the minced meat. Start kneading by adding eggs and spices.
  • When the mixture thickens, divide it into pieces with your hands and shape them into meatballs. Then leave it to rest in the fridge for 15 minutes.
  • Chop 1 onion into small pieces. Grate 2 cloves of garlic.
  • Remove the seeds of the peppers and chop them coarsely.
  • Shave and chop the asparagus using a peeler.
  • After preparing all your vegetables, put your pan on the stove and turn the heat on. Add olive oil. Then add the garlic and start sautéing.
  • Add the onions to the garlic and continue sautéing, stirring. When the onions start to change color slightly, add the peppers and then the asparagus.
  • Add salt, black pepper and balsamic vinegar to the sautéed vegetables. Turn off the stove.
  • Cook the meatballs that you left to rest in a cast iron pan or grill. Then put your sautéed vegetables and meatballs in a plate. Serve.
