Ingredients for Chicken Quesadilla Recipe
  • 1 chicken tenderloin
  • 2 tortilla breads
  • 1 large size onion
  • 1 red pepper
  • 1 green pepper
  • 1 yellow pepper
  • 1/2 small can corn
  • 1 teaspoon Cajun spice
  • 10-15 slices of jalapeno pepper (optional)
  • 4 slices cheddar cheese
  • 1 teaspoon of salt (can be reduced or increased)
  • 3 tablespoons of oil

How to Make Chicken Quesadilla Recipe?

  • Chop the onion into thin slices, chop the peppers into julienne, and chop the chicken into small cubes.
  • Add 2 tablespoons of oil to the pan and heat it. First add the onions, sauté for about 2 minutes, then add the peppers. Sauté it until it softens, but not too much.
  • After the onions and peppers are sautéed, set them aside on a plate. Heat the rest of the oil in the pan and add the chicken pieces.
  • Sauté very quickly and over high heat.
  • When the chickens are no longer pink, add the onion mixture back into the pan and sauté with the chickens.
  • Meanwhile, add spices and salt. After sautéing for 2-3 minutes, add the jalapeno pepper and corn, turn them over and remove them from the stove.
  • Divide the chicken mixture among half of your tortillas. Spread two slices of cheddar cheese over the mixture and fold the other half of the tortilla bread over it.
  • You can either compress the tortillas with the chicken mixture in them in a toaster, or heat them in a pan by placing a weight on them, front and back, for two minutes each, until the tortillas are slightly crispy.
