Ingredients for Ginger Chicken and Rice Recipe

For chicken:

  • 500 grams of fillet chicken breast
  • 1 cup of yoghurt
  • 5 grams of fresh ginger
  • 1 teaspoon coriander
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil

For rice:

  • 1 cup of rice
  • 1 medium sized onion
  • 1/2 cup chicken broth
  • 1 glass of water
  • 1 tablespoon olive oil

How to Make Ginger Chicken and Rice Recipe?

  • After cleaning the angry and boney parts of the fillet chicken breasts, chop them into long thin pieces.
  • Grate the peeled fresh ginger with the fine part of the grater. Mix the yoghurt with grated ginger, coriander, salt and freshly ground black pepper in a large bowl.
  • Let the fillet chicken breasts rest in the yoghurt marination mixture you prepared in the refrigerator for about three hours.
  • Heat the olive oil in a thick-bottomed cast iron pan, if possible. Put the chickens in the pan, pour the remaining yoghurt over them, and cook over high heat until the top and bottom parts are lightly browned.
  • Grate the peeled onion. After heating the olive oil in a wide-based rice pot, fry the onion until it acquires a light color.
  • Add hot water and chicken broth to the roasted onions and boil over low heat.
  • Add rice to boiling chicken broth. Cook over low heat until the rice is cooked through. After mixing it lightly and covering it with a paper towel, close the lid of the pot and let it rest for about 10 minutes.
  • Serve the brewed rice pilaf hot with the fried chicken pieces.
