Ingredients for New Year's Chicken Recipe

Ingredients for Stuffed Rice:

  • 4 tablespoons of butter
  • 3 tablespoons of olive oil
  • 2 onions (diced )
  • 2 tablespoons of peanuts
  • 1 cup raw almonds
  • 2 cups baldo rice
  • 2 teaspoons of salt
  • 1 teaspoon black pepper
  • 1 tablespoon dried mint
  • 1 teaspoon allspice
  • 1.5 teaspoons of cinnamon
  • 10 dried tomatoes
  • 2 tablespoons currants (soaked in water)
  • 15 chestnuts (cooked, peeled )
  • 3.5 cups hot water

For the Chicken Sauce:

  • 4 tablespoons strained yoghurt
  • 1 teaspoon red pepper powder
  • 1/2 tea glass of orange juice
  • 2 cloves of garlic
  • 1 teaspoon of salt
  • 1 teaspoon tomato paste
  • 1 orange zest
  • 1 whole chicken
  • 10 baby potatoes ( boiled)
  • 3 carrots ( steamed)
  • 2 purple carrots ( steamed)
  • 1/2 bunch broccoli (steamed)
  • 5 tablespoons of olive oil
  • 4 slices of orange

How to Make New Year's Chicken Recipe?

  • To prepare the stuffed pilaf, heat the butter and olive oil in a pot.
  • Add diced onions and fry until they turn pink.
  • Add the pistachios and raw almonds and fry until they change color.
  • Add the washed rice and fry until it becomes transparent.
  • Then add salt, black pepper, mint, allspice, cinnamon and dried tomatoes and mix well.
  • Finally, add the currants and chestnuts and cook the stuffed rice with the addition of water, first until it boils over high heat, and then over low heat until the water evaporates.
  • To prepare the sauce for the chicken, mix red pepper powder, orange juice, garlic, salt and tomato paste in a bowl.
  • Add the orange zest to the sauce and apply it to the chicken with massaging movements, covering every part of the chicken.
  • After marinating the chicken in the refrigerator for 2 hours, place it in a baking tray. Stuff some of the stuffed rice inside the chicken.
  • Sprinkle boiled baby potatoes, carrots, broccoli and orange slices around, then add olive oil and a little orange juice and bake in a preheated oven at 185 degrees for about 1 hour and 20 minutes.
  • Enjoy it with the remaining rice pilaf at your carefully prepared table.
