For the top of the turkey:

  • 3 tablespoons of olive oil
  • 1 tablespoon butter
  • juice of 1 lemon
  • 1 teaspoon tomato paste
  • 1 teaspoon of salt

For gravy sauce:

  • 1 turkey neck (to obtain turkey broth)
  • 1 small celery
  • 1 medium size carrot
  • 1 medium sized onion
  • 1 slice of lemon
  • 1/4 bunch of parsley
  • 1 teaspoon of black pepper
  • 2.5 glasses of water
  • 1 tablespoon butter
  • 1 tablespoon flour
  • 1.5 tablespoons of corn starch

How to Make Roasted Turkey Recipe?

  • The turkey you buy as a whole is sold with parts such as liver, neck and tail. After setting aside the neck part to prepare gravy sauce, wash the inside and outside of the turkey with plenty of water.
  • Dry the turkey, whose blood is completely drained and clean, with the help of paper towels. If it has feathers on it, smoke it on the stove.
  • Place the smoked turkey on a large, high-bottomed baking tray, with the legs side up.
  • Tie the turkey legs tightly with a heat-resistant rope to prevent them from opening during cooking. If the wing parts are open, fix them to the leg parts with the help of a wooden skewer.
  • To prepare an odorless oven-baked turkey seasoned with spices, we will fill its interior with vegetables.
  • Chop the peeled celery, onion, carrot and celery stalks into large pieces. Leave the garlic whole.
  • All the vegetables you have chopped; Stuff it by squeezing it into the interior of the whole turkey along with garlic, black peppercorns, sage, rosemary and bay leaf.
  • To make the turkey brown like a pomegranate; Mix olive oil, butter, lemon juice, tomato paste and salt in a separate bowl. Apply the mixture you prepared all over the turkey.
  • After adding two fingers of water to the baking tray, bake the turkey in a preheated oven at 160 degrees for about 2.5 hours. The inside of the turkey, which will be cooked at low temperature, will also be cooked.
  • To prepare gravy sauce; Place the turkey neck, which you have kept aside, in a small pot. Add water to it.
  • Cut the peeled celery, carrots and onion into small pieces and transfer them to the pot. Add lemon slice, parsley and black pepper and boil over medium heat for about 20 minutes.
  • Pass the turkey broth, which becomes flavorful with vegetables and releases its oil, through a strainer to have a smooth consistency.
  • Melt the butter in a small saucepan. Roast the flour until it gets a light colour. Add the hot turkey broth little by little and mix it into the sauce using a whisk.
  • Finally, add the corn starch to the sauce. After cooking on low heat for about 5 minutes, your gravy sauce, which has a thick consistency, is ready.
  • Once the cooking time is complete, remove the roasted turkey from the oven. To add flavor, use the cooked vegetables inside to make a separate sauce, the details of which we have shared in the serving suggestion, if desired.
  • After separating the leg parts with a sharp knife, serve the turkey pieces whose breast you cut into fillets with the addition of hot gravy sauce. Share with all your loved ones.
