- 500 grams of anchovies (cleaned, boneless)
- 2 tablespoons of salt
- 1 glass of apple cider vinegar
- 1/2 cup water
- 1.5 cups of olive oil
- 4 cloves of garlic
- 1 teaspoon of black pepper
- 2 hot dried peppers
How to Make Anchovy Marinade Recipe?
- Place the cleaned anchovies in a large strainer, skin side down. Sprinkle salt on all surfaces and repeat this process in layers until the fish is finished.
- Cover the strainer with stretch wrap, place a plate under the strainer and let it rest in the refrigerator for 2 hours.
- Remove the fish from the refrigerator, fill a large bowl with ice water and dip the fish in it to remove excess salt. Carefully put the fish back into the strainer and drain for 15-20 minutes.
- Place the anchovies on a large tray, skin down. Mix apple cider vinegar and water and pour over the fish. Cover the tray with stretch film and leave it in the refrigerator for 12 hours.
- Take the anchovies out of the refrigerator and carefully drain them again. Before placing the anchovies on a new and clean tray, pour a thin layer of olive oil onto the bottom of the tray. Arrange the anchovies on the tray in layers, with plenty of olive oil between them.
- Finally, add thinly sliced garlic, black peppercorns and dried hot peppers in pieces without seeds. Finally, add olive oil until you are sure there are no air gaps. Cover the tray and leave your anchovy marinade in the refrigerator for at least 2 more hours.
- Your anchovy marinade will be ready to eat after 2 hours. You can store this appetizer in the refrigerator for 15 days.
- Before serving, place as many anchovies as you want on a plate and wait for them to come to room temperature for 10-15 minutes. In this way, the olive oil that hardened in the refrigerator will become liquid again. When serving, you can offer dill, arugula, purple onion, toast and lemon. Enjoy your meal.
