- 1 cup black lentils
- 1 cup chicken broth
- 6 mushrooms (coarsely chopped )
- 1 teaspoon of fresh ginger
- 1 teaspoon salt
- 4 tablespoons of olive oil
- 500 grams of black mussels (boiled)
- 1 clove of garlic (sliced)
- juice of 1/2 lemon
- 1/2 teaspoon black pepper
- 1 teaspoon of ground red pepper
- 6 cocktail tomatoes ( coarsely chopped)
- 3 tablespoons soy sauce
- 1/4 bunch parsley (chopped)
How to Make Beluga Lentil Mussels Recipe?
- Wash the lentils thoroughly with plenty of cold water. Place the lentils in a small pot.
- Add chicken broth, two fingers of cold water and salt, and boil over low heat for 15-20 minutes until the lentils become soft.
- Drain the lentils and keep them aside.
- Heat a deep and large pan. Add mushrooms, fresh ginger, salt and olive oil and saute over high heat.
- When the mushrooms take color, add the mussels, garlic, lemon juice, spices and lentils and cook for a few more minutes.
- Finally, add tomatoes, soy sauce and a small amount of parsley and sauté for another minute.
