Ingredients for Cernia (Steamed Lagos) Recipe
  • 180 grams of fillet grouper fish
  • 15 grams of black olives
  • 3 grams of caper flower
  • 3 grams of parsley
  • 15 grams of fish broth
  • 15 grams of vegetable broth
  • 20 grams of cress
  • 5 grams of small squid
  • 30 grams of cherry tomatoes (long, thin ones)
  • 10 grams of extra virgin olive oil
  • 10 grams of white wine
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

How to Make Cernia (Steamed Lagos) Recipe?

  • Clean and fillet the grouper fish and turn it upside down in a cast iron pan. Add white wine and cook over high heat.
  • In a separate pan, sauté cherry tomatoes and mix with fried grouper fish. Add equal parts hot fish and vegetable broth. Continue cooking over low heat.
  • 1 minute before cooking, add four pieces of small squid. Add the separated parsley leaves. Flavour with salt and blackpepper.
  • Sauté the cress, caper flowers and black olives in a separate pan. Make the green mixture, including cress, and place the fried fish on the bottom of the serving plate. Pour the sauce over it and serve hot.
