Fish merzane is a recipe prepared by placing briefly sautéed seafood inside fried eggplant. The version prepared in the Beluga kitchen has nothing in it. There is everything from white meat fish to octopus. We can say "delicious" in one word to those who ask about its taste, and we can say that eggplant and seafood go very well together.

- 1/2 large sized garden eggplant
- 5 mushrooms _
- 5 medium sized shrimps
- 1 small size octopus arm
- 1 slice of white meat fish
- 1 medium sized green pepper
- 1 medium sized tomato
- 4 tablespoons of olive oil
- 2 tablespoons cream
- 2 tablespoons tomato juice
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 teaspoon vegetable seasoning
For the above:
- 1/2 cup grated cheddar cheese
How to Make Fish Merzane Recipe?
- Finely chop the mushrooms, wipe them with a damp cloth. After carefully sorting and cleaning the shrimp, leave them whole.
- Chop a slice of white-meat fish and octopus arm into small pieces. Cut the green pepper in half, remove its seeds, and cut it into half-moon shapes. Cut the peeled tomato into cubes.
- Carefully carve out the inner part of the eggplant and fry it in deep oil. Heat the olive oil in a large pan. Start sautéing the cleaned shrimp, white-meat fish and chopped octopus arm over high heat.
- Continue the sautéing process by adding green pepper, mushrooms and tomato cubes. Add cream and tomato juice and cook over low heat. Season to taste with salt, freshly ground black pepper and vegetable seasoning.
- Place the fried eggplant in the casserole dish. Fill the inside with seafood that you sautéed for a short time. Spread the remaining filling into the casserole dish. Continue the cooking process in a preheated 200 degree oven with the addition of grated cheddar cheese.
- Share the fish merzane, which you cooked until the cheddar cheese is completely melted and golden brown, with your loved ones without letting it sit in the heat.
