  • 1 teaspoon of sugar
  • 1 teaspoon of baking soda
  • Juice of 1/2 lemon
  • 1 bottle of mineral water

To find:

  • 1/2 cup flour
  • 1/2 cup corn flour
  • 1/2 teaspoon black pepper
  • 1 teaspoon of salt

For the tarator sauce:

  • 1 handful of walnuts
  • 1 clove of garlic
  • 2-3 pieces of stale bread
  • 2 tablespoons of strained yoghurt
  • 1 tablespoon olive oil
  • juice of 1/2 lemon
  • 1 teaspoon of salt
  • 1 tablespoon mayonnaise

How to Make Fried Calamari and Tarator Sauce Recipe?

  • Let's wait for the frozen squid to thaw in cold water. Place the thawed squid in the container in which we will marinate it, add salt, sugar, baking soda and lemon juice and rub it for about 10 minutes.
  • Then, add a bottle of mineral water, rub it for 1-2 more minutes, then close the lid and let it rest in the refrigerator for about a day. The more it rests, the softer our squid will be.
  • Let's coat the rested squids in the flour mixture without washing them.
  • To fry, add 3-4 fingers of sunflower oil to the pot. While cooking the calamari, let's cook it in several batches, not all at once, so that our oil does not cool down and our calamari does not harden.
  • Let's fry the flour-coated squids in the hot oil for about 2 minutes until they turn golden. Let's put it on a napkin and remove the excess oil.
  • For the tarator sauce, add all the ingredients to the rondo and grind. Let's put it in a serving bowl and let it rest in the fridge for an hour or two.
  • Let's serve it with squid. Enjoy your meal.
