Salmon Recipe with Vegetable Garnish

This type of fish, rich in Omega-3 and native to Norway, can now be found in all fishmongers, markets and restaurants. Although our country is covered with seas on three sides, it is unfortunately deprived of this food source. Moreover, it is a type of fish that should be consumed at least twice a week. It is time to say "stop" to this trend and bring more salmon to our tables.
How about trying salmon today, which turns into a delicious meal accompanied by a side dish, and enjoy it? We think salmon deserves much more than a chance.
For salmon:
- 3 salmon fillets (200 grams each )
- 3 tablespoons of olive oil
- 1 clove of garlic
- 2 teaspoons of salt
- 1/2 lemon _
For garnish:
- 1 medium sized onion
- 1 medium sized eggplant
- 2 cloves of garlic
- 1 red pepper
- 1 green pepper
- 15 green beans
- 10 fresh black-eyed peas
- 1 teaspoon of salt
- 1 tablespoon olive oil
How to Make Salmon Recipe with Vegetable Garnish?
- Peel and crush the garlic.
- Squeeze the juice from the lemon. Mix olive oil, salt, lemon and garlic.
- Apply the mixture on the salmon using a brush.
- Line the baking tray with baking paper and place the salmon. Bake at 180 degrees for about 20 minutes.
- While your salmon is cooking, prepare the garnish.
- Peel your eggplants and cut them into cubes. Leave it in salt water for a while and drain the water.
- Peel the onion and chop it finely.
- Also wash and chop the black-eyed peas and beans.
- Remove the seeds of the peppers and chop finely. Crush the garlic too.
- Put olive oil, onion and garlic in a pan. Sauté lightly.
- Then add the peppers and mix.
- Finally, add fresh black-eyed peas, eggplant and beans. Add salt and sauté.
- Remove the salmon from the oven. Serve with sautéed vegetables. Enjoy your meal.
