A very delicious and white-fleshed fish. When the smoked version comes together with eggplant foam and specially prepared sauce, a wonderful harmony of taste emerges.

Ingredients for Smoked Hake Recipe
  • 90 grams smoked hake
  • 500 grams of grilled eggplant
  • 5 garlic cloves
  • 15 ml. lemon juice
  • 130 ml. cream
  • 5 grams of granulated sugar
  • 5 grams of salt
  • 5 grams of black pepper

For service:

  • 40 grams of colored bell pepper (yellow, red and green)
  • 40 grams of red onion
  • 10 grams of garlic
  • 35 ml. white wine vinegar (or apple cider vinegar)
  • 10 grams of parsley
  • 3 grams marjoram
  • 5 cocktail tomatoes
  • 20 ml. olive oil

How to Make Smoked Hake Recipe?

  • To prepare the eggplant mousse; Mix grilled eggplant, chopped garlic, lemon juice, cream, granulated sugar, salt and pepper in a blender.
  • Put the sifted foam mixture on low heat to get a thick consistency. After it cools down to room temperature, put it in the refrigerator to cool down.
  • Cut the colorful bell peppers, seeds and cleaned, into small cubes along with the cocktail tomatoes. Finely chop the garlic, red onion, parsley and marjoram.
  • Prepare a sauce by mixing all chopped vegetables and greens with olive oil and white wine vinegar.
  • Shape the eggplant mousse with a piping bag and place it on a serving plate. Place the smoked hake fillet on the edges. Serve immediately with the sauce you prepared.
