Zarzuella is a rich roasted recipe in which pre-boiled squid, octopus, shelled mussels, as well as cleaned inner mussels and shrimps are mixed with vegetables and spices. It is one of the most popular seafood varieties of Kaserol, which represents the Mediterranean cuisine in the best way.

Ingredients for Zarzuella (Spanish Roasted) Recipe
  • 100 grams of squid (boiled)
  • 120 grams of headless shrimp (16-20 pieces)
  • 140 grams of octopus (boiled)
  • 120 grams of shelled mussels (boiled)
  • 40 grams of inner mussels
  • 40 grams shallot
  • 40 grams of green pepper
  • 140 grams of tomatoes
  • 3 grams of garlic
  • 2 grams hot sauce
  • 3cl . soy sauce
  • 1 gram of salt
  • 1 gram of freshly ground black pepper
  • 40 grams of olive oil
  • 25 grams of butter
  • 1/4 bunch of dill
  • 100cl . fish broth
  • 1 teaspoon of chili pepper (optional)

How to Make Zarzuella (Spanish Roasted) Recipe?

  • For Spanish roasted zarzuella; Remove the octopus, squid and shelled mussels that you boiled before. Clean the headless shrimps and inner mussels before boiling them.
  • Peel the shallots and garlic. Cut the green peppers in half and remove their seeds and chop them into julienne shapes.
  • After peeling the tomatoes and slicing them, remove the seeds. Chop into small cubes. Finely chop the dill. Preliminary preparations are complete to start making Zarzuella.
  • If possible, heat the cast iron pan on the stove and pour the olive oil into the pan. Roast the peeled shallots on high heat for a short time.
  • Add garlic and cleaned shrimp. After roasting for 2 minutes, add the previously boiled octopus, squid, shelled mussels and the inner mussels you cleaned.
  • After about 2 minutes, add the julienned green peppers. After continuing the cooking process for a short time, add the tomato cubes and fish stock.
  • Season the fried seafood by adding hot sauce, soy sauce, salt, freshly ground black pepper and chili peppers if desired.
  • Finally, add the butter and finely chopped dill and serve the Zarzuella hot without waiting.
