Ingredients for Albanian Liver Recipe

For liver:

  • 600 grams of liver
  • 1 tea glass of flour (for dough)
  • 1 teaspoon of salt
  • 1 teaspoon baking soda
  • 1 water glass measure of oil
  • 1.5 teaspoons of ground red pepper
  • 1 teaspoon coriander powder
  • 2 potatoes (diced )
  • 2 cups oil (for frying potatoes)

For the sumac onion:

  • 1 red onion ( chopped)
  • 1 teaspoon of salt
  • 1 teaspoon sumac
  • 1/2 bunch chopped parsley

How to Make Albanian Liver Recipe?

  • Cut the lamb liver, removing the membrane, into cube-sized pieces. Place the chopped lamb livers in a deep strainer to drain the blood.
  • Coat the blood-drained lungs in flour to which you add baking soda and salt. Strain again to remove excess flour from the livers.
  • Place the livers into the heated oil in the pan. When the livers start to cook, add red pepper powder and coriander powder. Strain the excess oil from the cooked livers and transfer them to a plate.
  • In a separate pan, fry the potatoes cut into cubes in hot oil and add them to the bowl with the livers.
  • Kill the red onions you chopped by rubbing them with 1 teaspoon of salt. After adding sumac and chopped parsley, mix well and add it to the bowl with the livers and mix well with the other ingredients.
