Although making Albanian liver seems like a very easy recipe, there are a few important tips. It is especially important not to wash the liver and to flour it while frying. All other tips are hidden in the making stages of the recipe. Albanian liver with lots of sum and onion salad wouldn't be complete without it. - 500 gr. veal liver
- 1 tea glass of flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon of ground red pepper
- 1 teaspoon of chili pepper
- 1 teaspoon black pepper
For the salad:
- 2 onions _
- 1/2 bunch of parsley
- 1 teaspoon sumac
- 1 teaspoon salt
How to Make Albanian Liver Recipe?
- First of all, we leave the liver, whose membrane has been removed and cut into cubes (or you can have it chopped in the town, when you buy it), in a bowl with a strainer for about 5-10 minutes to drain the blood and water. (We definitely do not wash the liver.)
- While waiting for the liver, we mix the flour, baking soda, salt and spices in a separate bowl and mix it well with the drained liver.
- We put plenty of oil in a deep pan. We sift the excess flour from the liver with a sieve and throw it into the hot oil. Once the liver changes color and becomes golden brown, you can immediately transfer it to the bowl to serve. If you wish, you can add spices after it is cooked.
- For the salad, we chop the onion into thin slices. We chop the parsley finely and add it to the onion. We add sumac and salt and mix.
- When serving the liver, you can serve it with cubed and fried potatoes and the salad whose recipe we have given. Bon appetit!
