Let's start by preparing the homemade doner kebab. After soaking the meat in a delicious sauce, laying it on top of each other and wrapping it, the first step of the doner kebab is complete. Then it's time to let it rest for 1 night. Once we cut the frozen meat thinly with a sharp knife and cook it in a pan, our base is ready. Now, we are creating a feast of taste with the contributions of homemade iskender doner, yoghurt and nail pita, which we prepare with a small difference and most importantly, at less cost.

Ingredients for Iskender Recipe

For Alexander:

  • 500 grams ribeye
  • 1 glass of water Milk
  • 1 teaspoon of honey (optional)
  • 1 onion _
  • 4 cloves of garlic
  • 1 teaspoon of ground red pepper
  • 2 tablespoons of olive oil
  • 1 level teaspoon of thyme
  • 1 teaspoon black pepper
  • 1 teaspoon of salt

For the sauce:

  • 2 spoonful butter
  • 1 tablespoon tomato paste
  • 1 teaspoon of ground red pepper

For service:

  • 2 pieces of pita bread
  • 8 tablespoons thick yogurt

How to Make Alexander Recipe?

  • Combine all ingredients except meat and onion and mix well.
  • Add the meat and chopped onions to the mixture. Stretch it and leave it in the refrigerator for at least six hours, if possible up to a day, to absorb the sauce.
  • Separate the meat from the rested meat in sauce. Arrange your meat on the stretch film.
  • Wrap tightly and shape into salami. Leave it in the freezer for at least 1 night.
  • Take it out of the freezer. Before it defrosts, cut it thinly with a sharp knife.
  • Melt the butter in the pan and add the meat. Cook until the water is released and absorbed.
  • For the sauce; Add butter into a sauce pan. Roast the tomato paste and ground pepper well, add 1 glass of boiled water. Add salt and pepper and bring to a boil.
  • Chop your pitas into cubes. Let the pitas warm and soften by pouring the sauce over them. Place the meat on the pita and pour the sauce over it again, this time in a smaller amount. If you wish, you can serve it with pan-fried peppers and tomatoes or yoghurt. Bon appetit.
