Ingredients for Ankara Pan Recipe
  • 4 lamb shanks
  • 3 cups barley noodles
  • 2 onions (chopped )
  • 4 green peppers ( chopped)
  • 3 tomatoes (grated )
  • 3 cloves of garlic (chopped)
  • 2 tablespoons of butter (1 tablespoon for sauce)
  • 1 tablespoon tomato paste
  • 1 tablespoon pepper paste
  • 1 teaspoon of salt (can be reduced or increased)
  • 1/2 cup oil
  • 3.5 cups hot water (1/2 cup will be used for sauce)

How to Make Ankara Pan Recipe?

  • In a pot, fry the noodles with oil and 1 tablespoon of butter until they change color.
  • After they change color, remove them from the stove and spread the noodles on a tray that can go into the oven.
  • Half-cook the lamb shanks in the pot for 20-25 minutes so that they brown evenly on all sides. Since it will continue to cook in the oven, the inside will not remain raw.
  • In a separate pan, fry the onions with 1 tablespoon of butter until they turn pink.
  • Add the peppers and garlic to the onions and continue roasting.
  • Add the tomato and pepper pastes and fry until the smell disappears, then add the grated tomatoes.
  • While the grated tomatoes are cooking, pour 1/2 cup of hot water over the sauce and boil it for a while, then remove it from the stove.
  • Pour the tomato sauce from the stove over the roasted barley noodles and mix.
  • Then, arrange the lamb shanks on the noodles and add enough hot water to cover the noodles by two fingers.
  • Bake in the oven at 190 degrees for about 40 minutes until the meat is cooked and the noodles absorb their water and serve hot.
