Ingredients for Baked Eggplant Kebab Recipe
  • 500 grams of minced meat
  • 2 medium sized onions (grated)
  • 1/2 bunch of parsley
  • 2 cloves of garlic
  • 1 glass of stale bread
  • 1 teaspoon of salt
  • 1 teaspoon black pepper
  • 1 teaspoon of chili pepper
  • 1 teaspoon cumin
  • 3 eggplants _
  • 3 cherry tomatoes ( to add to empty spaces)

For the above:

  • 1 tablespoon tomato paste
  • 1 glass of hot water
  • 1 grated tomato
  • 1 teaspoon of salt
  • 1 teaspoon black pepper
  • 2 green peppers
  • 1 clove of crushed garlic

How to Make Baked Eggplant Kebab Recipe?

  • In a large bowl, add 500 grams of minced meat, 2 finely grated onions and half a bunch of parsley.
  • Add 2 cloves of crushed garlic, 1 cup of bread crumbs and 1 teaspoon each of salt, chili pepper, cumin and black pepper.
  • Then knead well and shape the meatballs you cut into egg-sized balls into round shapes.
  • Combine the meatballs with 3 eggplants that you cut into two fingers thick.
  • Arrange them in order and place them in the baking dish and fill the empty spaces with cherry tomatoes.
  • For the sauce, mix 1 tablespoon of tomato paste and 1 glass of hot water in a separate bowl. Add 1 grated tomato, 1 teaspoon of salt, black pepper and finally 2 chopped green peppers and 1 clove of crushed garlic and mix again.
  • Pour the sauce and 1 tea glass of water over the eggplants and meatballs and bake in a preheated 200 degree oven, preferably in a turbo or fan oven, for 50-60 minutes.
