You don't have to go to a kebab restaurant to have a good kebab. You can do justice to Gaziantep's famous eggplant (balcan) kebab with this recipe. So, let the barbecues be lit and the skewers ready!

 
Ingredients for Barbecued Eggplant Kebab Recipe
  • 4 sliced eggplants
  • 500 grams of lamb/beef mixed minced meat
  • 100 grams of tail fat
  • 4 lavash _
  • 1 teaspoon (wiping) salt
  • 1 teaspoon (wiping) black pepper

How to Make Barbecued Eggplant Kebab Recipe?

  • Slice the eggplants into rounds without peeling them.
  • Leave the eggplants you put in salt water for a while to remove the bitter water.
  • Knead the beef-lamb mixture minced meat and tail fat, specially ground from your butcher, with salt and pepper for 5 minutes.
  • Squeeze the eggplants, drain the water and make round meatballs from the minced meat you prepared.
  • Arrange one eggplant and one meatball on the kebab skewers, starting with the eggplant.
  • After finishing with the eggplant on top, leave it to cook over the fire, turning it occasionally.
  • When the eggplant skins start to wrinkle, you can check the meatballs and remove them from the heat. Enjoy your meal.
