  • 1 teaspoon dried mint
  • 1 teaspoon of thyme
  • 1 teaspoon of ground red pepper
  • 1 teaspoon of salt
  • 1/4 teaspoon granulated sugar
  • 1 teaspoon ground black pepper
  • 1 teaspoon tomato paste
  • 1 teaspoon of pepper paste

How to Make Bulgur Pilaf with Meatballs and Eggplant Recipe?

  • In a large pot, add half the onion, 3 green peppers, red pepper, bulgur, cumin, mint, black pepper and salt and sauté in 3 tablespoons of olive oil.
  • Add tomatoes and sauté until they release their juice. Finally, water is added and the bulgur is cooked until it becomes soft.
  • In a separate pan, sauté 1/4 onion, 2 green peppers, diced eggplant, salt, sugar, black pepper and red pepper powder with 2 tablespoons of olive oil.
  • Grate 1/4 onion, grate garlic, salt, black pepper, thyme, red pepper powder and ground meat and knead. Wet your hands and prepare small round meatballs. It is cooked in 1 tablespoon of olive oil.
