Ingredients for Çökertme Kebab Recipe

For the meat:

  • 300 grams of beef sirloin
  • 2 tablespoons of oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper

For meat marination:

  • 1 grated onion
  • 1/2 tea glass of olive oil
  • 1 teaspoon salt
  • 1 teaspoon cumin
  • 1 teaspoon black pepper
  • 1/2 cup milk
  • 1 glass of soda
  • 1 tablespoon butter (for cooking)

For matcha potatoes:

  • 2 medium sized potatoes
  • 1.5 cups sunflower oil (for frying)

For tomato sauce:

  • 2 spoonful butter
  • 1 teaspoon of chili pepper
  • 1 grated tomato

For service:

  • 4 tablespoons of garlic yoghurt

How to Make Çökertme Kebab Recipe?

  • Cut the steak or tenderloin slices, cleaned of excess fat, into long thin strips. Mix all the ingredients for meat marination in a bowl and let it rest in the refrigerator for about 1 hour in a bowl covered with stretch film.
  • Cut the peeled potatoes into match-sized pieces.
  • Rinse them in plenty of water and dry them with a paper towel.
  • Heat the deep oil in a small pan and fry in several batches until golden brown.
  • Place it on a plate lined with paper towels and let it rest.
  • To fry the meat, heat a small amount of oil in a cast iron pan, if possible. Add the butter. Cook the marinated meat on high heat. When they take color, add salt and freshly ground black pepper and remove from the stove.
  • To prepare tomato sauce; Heat the butter in a small pan.
  • Add chili peppers and grated tomatoes, cook for 10 minutes and remove from the stove.
  • Serving plates respectively; Take fried matcha potatoes, whipped garlic yoghurt, tomato sauce and sautéed meat slices, decorate them with fried tomatoes and green peppers and share them with your loved ones without waiting. Enjoy your meal.
