Ingredients for Çökertme Kebab Recipe
  • 300 grams of beef entrecote (julienned)
  • 1 medium sized onion
  • 1 heaping tablespoon of yoghurt
  • 3 tomatoes _
  • 1 tablespoon tomato paste
  • 2 tablespoons of olive oil
  • 1 teaspoon of salt
  • 1 teaspoon of chili pepper
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cumin
  • 1 bowl of yoghurt
  • 2 cloves of garlic
  • 5 potatoes _

How to Make Çökertme Kebab Recipe?

  • We grate the onion and squeeze its juice into a bowl with our hands. We add the yoghurt and meat, mix them, stretch them, and keep them in the refrigerator for at least 2 hours.
  • After the marinating process is completed, we start cutting the potatoes.
  • After chopping the potatoes finely, we soak them in cold salted water. The release of starch is very important for its crispness.
  • After waiting in water for half an hour, we put the potatoes on a clean towel or paper towel and dry them.
  • We fry it in hot oil, place it messily on a towel and salt it. To serve, we will then place our potatoes on a serving plate.
  • We are preparing garlic yoghurt.
  • After the pan has heated up with a little olive oil, we take our meat and sauté it in its own juice.
  • We turn the heat down and let it sauté slowly, and flavor it with some salt, chili pepper and cumin.
  • We are preparing our tomato sauce. Since the tomato has its own juice, there is no need to add additional water.
  • We cook the tomatoes, tomato paste and spices with a little olive oil over medium heat. As it cooks, its water will be absorbed and it will get a thick consistency.
  • When all the ingredients are ready, we put the potatoes on the bottom, the yoghurt on top, the tomato sauce on top, then we place the meat and optionally put the sauce on top again. Enjoy your meal.
