A different version of the recipe for Kurdan kebab, or better known as Islim kebab, is the eggplant bundle with meat recipe. While the thinly sliced eggplants are waiting in salted water, prepare the sauce with garlic, onion, lamb meat and tomato paste.
Let the meat be soft. Let them have a little separation with the sauce (don't worry, the oven will bring them together). Fry the eggplant slices on the grill or in a pan with grill marks in a little olive oil. Place them in the bowl diagonally and fill the inside with cubed meat. - 4 medium sized eggplants
- 1/2 tea glass of olive oil
- 800 grams of cubed lamb meat
- 1 medium sized onion
- 1 clove of garlic
- 1 medium sized tomato
- 1/2 teaspoon pepper paste
- 1 teaspoon of salt
- 1/2 teaspoon black peppercorns
- 1/2 teaspoon thyme
- 1 bay leaf
- 2 tea glasses of hot water
How to Make Eggplant Bundle with Meat Recipe?
- Peel the eggplants, removing the ends, in various colours. Leave it in plenty of salt water to remove its bitterness and prevent it from darkening.
- Chop the onion into small cubes. Slice the garlic thinly. Cut the tomato in half and remove the ends and grate it with the fine part of the grater.
- Heat half the olive oil in a wide-based pan. Add onion and garlic and sauté until they get a light color.
- Add the meat and start roasting it with the onions over high heat. When the meat starts to take color, add grated tomatoes and pepper paste and mix.
- Add bay leaves, thyme, black peppercorns and hot water and cook in a closed pot until the meat is tender.
- After the cooking process, put the meat aside and strain the remaining sauce through a strainer. Season with salt.
- Squeeze out excess water from the eggplants that you have kept in salt water and dry them. Lightly grease with the remaining olive oil and fry upside down on a grill or in a wide-based pan.
- To prepare the bundles; Place three fried eggplant slices in a crosswise shape in a medium-sized soup bowl. Fill the inside with the meat mixture and close the ends tightly by joining the ends.
- Turn the ready bundle upside down and place it on the baking tray. Repeat the same process until the eggplant slices and meat are finished. Add the tomato paste sauce mixture and bake in a preheated oven at 180 degrees for 30-35 minutes.
- Share the eggplant bundles you took out of the oven with your loved ones by pouring the remaining tomato paste sauce on them.
