Eggplant meatballs are a delicious and elegantly presented recipe, created by wrapping a delicious home-cooked meatball with eggplant.

 
Ingredients for Eggplant Meatballs Recipe
  • 3 eggplants _
  • 1 kg. minced meat (mixed beef/lamb as desired)
  • Juice of 2 onions
  • 3 tablespoons of breadcrumbs
  • 1/2 bunch of parsley
  • 3 cloves of garlic
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1 teaspoon of black pepper
  • 1/2 cup frying oil
  • 1 tablespoon tomato paste (tomato and pepper mixture)
  • 1 teaspoon of butter
  • 1 tablespoon of oil
  • 1 glass of water (broth as desired)

How to Make Eggplant Meatballs Recipe?

  • Peel the eggplants in pajamas, cut them into 12 thin, long slices and place them in salted water.
  • Finely chop the parsley.
  • Grate the onions and squeeze the juice. Crush the garlic.
  • Knead the minced meat, onion juice, garlic, parsley, breadcrumbs, salt and spices for 15 minutes and put it in the refrigerator for 30 minutes to rest.
  • Preheat the oven to 190 degrees.
  • Drain the eggplants thoroughly and fry them in heated oil.
  • Remove excess oil from the fried eggplant slices by placing them on paper towels.
  • Take out the meatball mixture that has been resting in the refrigerator. Divide into 12 equal pieces and shape into round meatballs.
  • Place 2 fried eggplant slices in a plus shape and place a round meatball in the middle. Fold the slices over the meatballs. If the ends of the eggplants are short, secure them with a toothpick.
  • Repeat the same process with 12 meatballs. Then place the eggplant meatballs in a baking dish.
  • Heat the butter and oil in a small pan. Add tomato paste and fry. When the smell of the tomato paste disappears, add the water. After the sauce simmers for 3-4 minutes, pour it over the meatballs in the baking dish.
  • Place the baking dish in the preheated oven and bake for 30-40 minutes.
