Ingredients for Eggplant Shish Meatballs Recipe

For Meatballs:

  • 400 grams of medium-fat ground beef
  • 1 egg _
  • 1 onion (processed )
  • 3 tablespoons of breadcrumbs
  • 1 teaspoon of salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon cumin
  • 1 clove grated garlic
  • 2 tablespoons of oil (for cooking the meatballs)

For Eggplant:

  • 4 eggplants (thinly sliced, soaked in salted water )
  • 6 tablespoons of olive oil
  • 1.5 teaspoons of salt

For Tomato Sauce:

  • 3 tablespoons of oil
  • 2 cloves of crushed garlic
  • 1.5 cups tomato puree
  • 1 tablespoon tomato paste
  • 1 teaspoon of salt
  • 1/2 teaspoon black pepper
  • 1/2 cup water

For the above:

  • 1 pinch chopped parsley

How to Make Eggplant Shish Meatballs Recipe?

  • Place the thinly sliced and dried eggplants in salt water on a baking tray lined with baking paper. Pour olive oil and salt over it and bake at 180 degrees for 15 minutes.
  • For the meatballs; In a deep bowl, knead the minced meat, egg, onion, breadcrumbs, salt, black pepper, cumin and garlic until well mixed.
  • Take palm-sized pieces of the mixture, shape them into long flat meatballs and thread them onto skewers.
  • Cook the meatballs you prepared in a heated pan for about 2 minutes, both front and back.
  • For the sauce; Fry the garlic with oil in a sauce pan. Then add tomato puree and tomato paste. Season with salt and pepper, add water, boil for a while and remove from the stove.
  • Place 2 eggplants you took out of the oven on the counter so that they touch each other. Put the skewer meatballs on the end and wrap it.
  • Place the wrapped meatballs in the oven tray, pour the tomato sauce over them and bake them in the oven at 185 degrees for 15 minutes. Place the skewer meatballs you took out of the oven on a serving plate, sprinkle with parsley and serve. Enjoy your meal!
