Ingredients for Eggplant Wrap with Meatballs Recipe
  • 4 eggplants (sliced, soaked in salt water )

For Meatball Stuff:

  • 600 grams of minced meat
  • 1 onion (grated )
  • 2 cloves of garlic (grated)
  • 1 tablespoon flour
  • 1 egg _
  • 2 cloves grated garlic
  • 4 tablespoons of oil
  • 1 teaspoon black pepper
  • 1 teaspoon of thyme
  • 1 teaspoon of red pepper powder
  • 1 teaspoon of salt

To Oil the Eggplants:

  • 1/2 tea glass of oil
  • 1 teaspoon of red pepper powder

For the Sauce:

  • 1 tablespoon tomato paste
  • 3 tablespoons of oil
  • 2 grated tomatoes
  • 1/2 teaspoon salt
  • 1 teaspoon of ground red pepper
  • 1 glass of water

For the above:

  • 20 cherry tomatoes

How to Make Eggplant Wrap Recipe with Meatballs?

  • In a large bowl, knead the minced meat, grated onion, garlic, egg, flour, oil, salt, thyme, black pepper and red pepper powder well. Cover the meatball mixture you prepared and let it rest in the refrigerator for 30 minutes.
  • Mix the oil and red pepper powder to spread on the eggplants. Dry the eggplants that you sliced and soaked in salt water with paper towels. Place it on a baking tray lined with baking paper and brush it with peppery oil.
  • Bake the eggplants for 10 minutes in the oven preheated to 190 degrees. After the eggplants have cooled, take pieces of the meatball mixture and shape them lengthwise.
  • Place the meatball on the eggplant slice and curl both ends by turning them in opposite directions. Then roll it inwards to form a snail shape and place it in the baking dish. Add cherry tomatoes to the middle of the meatballs.
  • Mix tomato paste, grated tomatoes, oil, salt, red pepper powder and water in a bowl. Pour the sauce you prepared over the meatballs you placed in a bowl.
  • Bake in the oven preheated to 190 degrees for about 25-30 minutes.
  • After cooking, you can serve it with mashed potatoes or rice pilaf, if desired. Enjoy your meal!
