Elbasan tava is a historical dish of ours that has its origins in Thrace and can be traced back to the Ottoman palace cuisine. It is said that dishes containing lots of dairy products came to our cuisine mostly from the Balkans . Considering the amount of yoghurt in Elbasan pan, we can say that it intensely carries the influence of Balkan culinary culture.

Ingredients for Elbasan Pan Recipe
  • 4 tablespoons of butter
  • 2 tablespoons of oil
  • 800 grams of lamb shoulder
  • 10 shallots _
  • 2 teaspoons of salt (can be reduced or increased)
  • 2 cups of yoghurt
  • 3 egg yolks
  • 3/4 cup flour
  • 2 cloves of garlic
  • 1 teaspoon of thyme (optional)
  • 1 teaspoon dried basil (optional)
  • 1 teaspoon red pepper

For finishing:

  • 2 cups strained yoghurt
  • 3 egg yolks
  • 4 tablespoons of oil
  • 3 tablespoons of flour
  • 1 teaspoon of salt
  • 1 teaspoon black pepper
  • 1 tea glass of water

How to Make Elbasan Pan Recipe?

  • Heat the butter and oil in a pot, add the meat to the pot and seal over high heat.
  • Once the meat is sealed, add the shallots.
  • After 2-3 minutes, add salt and enough hot water to cover it.
  • Lower the heat and cook for about 1 hour until your meat is very tender.
  • While the meat is cooking, mix the yoghurt, egg yolks, flour, salt, black pepper and water in a bowl.
  • At the end of the cooking time, place the cooked meat and shallots in a baking dish.
  • Preheat your oven to 180 degrees. Pour the mixture over the meat in the baking dish.
  • Place the dish in the oven and bake until golden brown, about 25 minutes. Your Elbasan pan is ready.
