Ingredients for Hünkar Beğendi Recipe

For Meat Saute:

  • 400 grams of cubed beef
  • 2 tablespoons of olive oil
  • 2 large size onions
  • 1 teaspoon dried thyme
  • 1 teaspoon of pepper paste
  • 2 large tomatoes (peeled and coarsely chopped)
  • 3 green peppers (seeds removed and roughly chopped )
  • 1 teaspoon black pepper
  • 1 teaspoon of salt
  • 600 milliliters of hot water

For Liked:

  • 4 roasted eggplants (peeled and finely chopped )
  • 2 tablespoons of flour
  • 2 spoonful butter
  • 400 milliliters of milk
  • 1/2 cup grated cheddar cheese
  • 1/2 teaspoon grated nutmeg
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt

How to Make Hünkar Beğendi Recipe?

  • Sauté olive oil, onion and meat in the pot.
  • When the meat releases its water, add a glass of water and continue cooking. As the water decreases, add one glass at a time and continue the process until the meat is cooked.
  • When cooked, add tomato paste, thyme, black pepper, salt, tomato and green pepper, turn it a few times and turn off the stove.
  • For liking: Flour and butter are roasted. Slowly add milk and cook until it thickens without lumps.
  • Add cheddar cheese, nutmeg, black pepper and salt and mix. Add the eggplants last and mix thoroughly.
