Ingredients for Hünkar Beğendi with Meatballs Recipe

For the meatballs:

  • 400 grams of ground beef
  • 1 onion _
  • 1 clove of garlic
  • 1 teaspoon of salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cumin
  • 1 egg _
  • 1 tea glass of bread crumbs

For the eggplant part:

  • 3 eggplants _
  • 1.5 cups of milk
  • 2 spoonful butter
  • 2 tablespoons of flour
  • 200 grams grated cheddar cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 pinch grated nutmeg

For sauce:

  • 1 tablespoon butter
  • 1 tablespoon pepper paste
  • 1 tea glass of water
  • 1/2 teaspoon salt

How to Make Hünkar Beğendi with Meatballs Recipe?

  • First, wash and dry the eggplants. Make holes in the eggplants with the help of a fork or knife. Roast in a hot oven until soft.
  • After the roasted eggplants have cooled a little, peel them and chop them finely.
  • In a separate pot, fry the butter and flour for a few minutes, stirring constantly.
  • Add the milk and continue mixing.
  • When it reaches a thick consistency, add the cheddar cheese and eggplants.
  • Add salt, black pepper, grated nutmeg and mix, cook for a few more minutes and then remove from the stove.
  • For the meatballs, put the minced meat into the kneading bowl.
  • Add grated onion, egg, garlic, cumin, salt, black pepper, chili pepper and bread crumbs and knead. You can also add different spices you like.
  • Make walnut-sized meatballs and place them on a greased baking tray.
  • Bake in the oven until golden brown. If you wish, you can also fry it in a pan.
  • For the sauce, put butter and tomato paste in the pan and fry. Then add water and mix.
  • Add salt and pepper, boil for a few minutes and remove from the stove.
  • First put the eggplant you like on the serving plate.
  • Place marble meatballs on top and drizzle with sauce.
