'I have guests today, what should I cook?' Those who say, 'I want to make an easy but very elaborate recipe.' Let's take those who say here. A recipe that will suit a carefully prepared dinner table is coming: Islim Kebab!
İslim kebab is a kebab in love with eggplant, prepared with large-sized meatballs that you prepare and fry in advance. The fried eggplant strips included in the recipe wrap the meatballs, and with the help of the tomato sauce you prepared, the kebabs cooked in the oven are golden brown. This recipe, also known as toothpick kebab, is very easy to make, although it looks quite challenging, it impresses on the table.
- 4 medium sized eggplants
- 3 tablespoons of olive oil
- 2 medium sized tomatoes
- 2 medium sized green peppers
For the meatballs:
- 500 grams of medium-fat ground meat
- 1 medium sized onion ( grated )
- 4 tablespoons breadcrumbs
- 2 cloves of garlic (crushed)
- 1 egg _
- 1 teaspoon of salt
- 1 teaspoon of chili pepper
- 1 teaspoon cumin
- 1 teaspoon black pepper
For the sauce:
- 2 tablespoons of olive oil
- 2 tomatoes (grated )
- 1 clove of garlic (crushed)
- 1/2 cup hot water
- 1/2 teaspoon salt
- 1 teaspoon black pepper
How to Make Islim Kebab Recipe?
- Slice the eggplants, which you have peeled in various colours, into long thin strips with the help of a sharp knife. Leave it in salt water to remove the bitterness.
- Place the medium-fat ground beef into the mixing bowl. Add grated onion, egg and breadcrumbs, garlic, salt, black pepper, chili pepper and cumin.
- Knead the meatball mixture for about 10-15 minutes until it is combined. Cut the meatball mixture into pieces slightly larger than six walnuts.
- Cook the meatballs that you rolled in your palms, turning them upside down in the pan.
- Drain the water from the eggplants resting in salt water and rinse them in plenty of water. Dry them with the help of a paper towel. Fry it by turning it upside down in the pan where you have heated the oil. Remove excess oil with the help of paper towels.
- Divide the green peppers from which you remove the stem parts into four equal parts. Cut the cherry tomatoes in half.
- Place two fried eggplant strips on a serving plate to form a plus shape. Put one fried meatball in the middle and close it.
- Place a piece of green pepper and cherry tomato on it and secure it with a toothpick. Wrap all the meatballs in eggplant strips in the same way and place them on the baking tray.
- For the sauce; Heat the olive oil in a small saucepan. Cook grated tomatoes and garlic. After adding salt and pepper, boil for 4-5 minutes and remove from the stove.
- Transfer the sauce you prepared to the baking tray where you placed the eggplants.
- Serve the Islim kebabs hot after cooking them in a preheated 180 degree oven for about 30 minutes. Bon appetit!
