How to Make Kazan Kebab Recipe?
- Grate the medium-sized onion with the fine side of the grater. Add the lean lamb mince into the mixing bowl; Prepare the meatball mixture by kneading with grated onion, plain butter and salt.
- Peel the eggplants that you have washed in plenty of water in various ways. Make scratches in five or six places in the middle of the eggplants from which you removed the tip and stem parts.
- Be careful not to cut too deeply so that the eggplants do not open during cooking and the slices do not separate from the places you cut. Apply the same process to medium-sized tomatoes that you have not peeled.
- Prepare flat meatballs from the plain oily meatball mixture and place them in the gaps you made on the eggplants and tomatoes.
- For the kebab tomato paste sauce; Melt the clarified butter in a small sauce pan. Add tomato paste and fry in melted butter for 2-3 minutes, then add hot water and salt and thicken the sauce.
- Pour the tomato paste sauce over the eggplant and tomato kebabs that you placed spacedly on the baking tray.
