Kilis pan, as the name suggests, is a local dish specific to Kilis. Although it is very similar to tray kebabs, which have different interpretations in many regions, it is also a meat recipe with its own characteristics and taste.

Ingredients for Kilis Pan Recipe
  • 500 grams of minced lamb
  • 1 onion (finely chopped )
  • 2 tomatoes (finely chopped, seeds removed )
  • 4 green peppers ( finely chopped)
  • 1 capia pepper ( finely chopped)
  • 1 pinch parsley (finely chopped)
  • 2 tablespoons of oil
  • 2 cloves of garlic
  • 1 tablespoon pepper paste
  • 1 tablespoon tomato paste
  • 1.5 teaspoons of salt
  • 1 teaspoon black pepper
  • 1 teaspoon cumin
  • 2 eggplants (chopped into strips, soaked in salt water )

How to Make Kilis Pan Recipe?

  • Place the minced meat in a deep bowl. Add all the ingredients except eggplant.
  • Knead until all the ingredients in the bowl are mixed together.
  • Stretch the kneaded minced meat and let it rest in the refrigerator for about 1 hour.
  • Soak the eggplants that you sliced thinly in salt water and then dry them. Oil the bottom of a tray or baking pan and place the sliced eggplants on it. Sprinkle some salt over the eggplants.
  • Spread the rested minced meat evenly over the eggplants.
  • Cut the minced meat into triangular portions with a knife and decorate with peppers and tomatoes.
  • Bake in a preheated oven at 180 degrees for 30 minutes. Serve hot. Enjoy your meal!
