Today, we would like to introduce you to the Küfte-Bozbaş recipe, a very old and very delicious main dish from Baku, the capital of Azerbaijan. However, since there were no potatoes in these regions in the past, chestnuts were used. If you wish, you can use chestnuts instead of potatoes. Thank you in advance.

 
Ingredients for Kufte Bozbaş Recipe

For the Broth:

  • 3-4 lamb shanks
  • 3 onions _
  • 200 grams of chickpeas
  • 4 potatoes _
  • 4-5 dried plums
  • 1 tablespoon of salt

For the Meatballs:

  • 1 kilogram of minced meat (100 grams of tail fat)
  • 200 grams of onion (finely chopped)
  • 100 grams of rice
  • 1 teaspoon of salt
  • 1 teaspoon black pepper
  • 1 tablespoon dried mint
  • 7 dried plums

How to Make Kufte Bozbas Recipe?

  • Place the lamb shanks in a pot, add 2-3 liters of water and let it boil over high heat. Be sure to skim off the foam from the meat when it is about to boil.
  • Then add 3 onions and let it boil over low heat for 35-40 minutes.
  • Meanwhile, to make the meatballs, add the minced meat, onion, rice, salt, black pepper and dried mint and knead well (15 minutes).
  • After this, make 7-8 round molds (120-130 gr) and put one dried plum inside each and keep the molds in the refrigerator for 15-20 minutes.
  • After boiling for 35-40 minutes, remove the onions from the pot.
  • Remove the shanks from the pot and keep them aside on another plate.
  • Bring the meat broth to boil and add the meatballs to the pot one by one.
  • After 5-10 minutes, after the molds have foamed, add the chickpeas and dried plums to the pot and let them cook for 45 minutes.
  • After 45 minutes, add the saffron or its infused water and the potatoes (or boiled chestnuts) to the pot.
  • Separate the meat of the shanks from the bones, add them to the pot and cook for another 15-20 minutes. (until the potatoes become soft) Bon appetit.
