  • 1 lamb shank
  • 100 grams of tomatoes
  • 100 grams of onion
  • 40 grams of carrots
  • 25 grams of celery stalks
  • 5 grams of juniper seeds
  • 2 grams of garlic
  • 2 grams of black pepper
  • 2 grams of fresh thyme
  • 5cl . olive oil

For garnish:

  • 150 grams of fresh potatoes
  • 3 grams finely chopped parsley
  • 80 grams of asparagus
  • 2cl . olive oil
  • 2 grams of salt and pepper

How to Make Lamb Shank Recipe?

  • After heating the olive oil on the stove, seal the lamb shank with excess fat removed over high heat.
  • Roast the finely chopped onion, garlic, fresh thyme, carrot and celery stalk over high heat.
  • Add chopped tomatoes and juniper seeds, add enough vegetable broth to cover them, then cook over low heat for approximately 90 minutes.
  • Remove the cooked lamb shank from the sauce. Blend the remaining sauce with a hand blender and set it aside to use when serving.
