Who can say no to stuffed meatballs? Some people add tomato paste while kneading their bulgur, some add spices. What is unique to Malatya is adding minced meat to bulgur.
For the meatball dough:
- 5 cups bulgur for meatballs
- 1.5 cups of broken wheat (it will not be coarse, in flour form)
- 1 tea glass of flour
To soak:
- 4 cups hot water
- 1 teaspoon of salt
For the filling:
- 600 grams of ground beef (medium fat, not dry/lean meat)
- 4 medium sized onions
- 4 tablespoons of olive oil
- 1/2 tablespoon pepper paste
- 2 teaspoons black pepper
- 1 teaspoon salt
For the above:
- 4 tablespoons melted butter
How to Make Malatya Stuffed Meatballs Recipe?
- We put the bulgur and cracked wheat in a bowl, sprinkle salt on it and add hot water.
- We cover it with a tray and let it rest for 10 minutes.
- We add flour to the rested bulgur and knead it thoroughly. (It should be kneaded by hand until it reaches a consistency that will not fall apart.)
- For internal mortar; We put minced meat in a pan and stir until it releases its water. We break it into pieces by crushing it with the back of the spoon to avoid lumps.
- We add oil and fry a little.
- We add small diced onions and fry them like this for a while.
- We add tomato paste and salt. We roast for another minute or two. We turn off the stove and add black pepper.
- We cut tangerine-sized balls. Using the index finger, we dip the meatball into the meatball and carefully open the middle part. We smooth the edges with the help of our thumb.
- We create smooth rounds by adding the filling. (We will need to dip our hands in water from time to time to prevent the dough from sticking.)
- After the whole process is completed, we boil water in a pot and throw the meatballs into it and boil them for about 7-8 minutes. We put it on a serving plate, pour heated butter on it and serve it like this.
