Manisa kebab and Manisa bohça kebab are recipes that are often confused with each other. Manisa kebab is a version of Iskender kebab made with thin and long meatballs. Bohça kebab, on the other hand, is a sumptuous and delicious recipe that consists of sautéed meat with plenty of peas, bundled with crepes and crowned with béchamel sauce.

 
Ingredients for Manisa Bohça Kebab Recipe
  • 500 grams of beef cubed meat
  • 1 cup boiled peas
  • 1 large tomato
  • 1 teaspoon tomato paste
  • 1 onion _
  • 2 cloves of garlic
  • 2 tablespoons of oil
  • 1 tablespoon butter
  • 1/2 cup broth or regular water
  • 1 teaspoon of salt (can be reduced or increased)
  • 1 teaspoon black pepper

For the crepes:

  • 1 cup flour
  • 1.5 cups of milk
  • 1 egg _
  • 1 teaspoon of salt (can be reduced or increased)

For bechamel sauce:

  • 2 tablespoons of flour
  • 40 grams of butter
  • 2 cups of milk
  • 1 teaspoon white pepper
  • 1 teaspoon of salt (can be reduced or increased)
  • 1 bay leaf
  • 1 pinch grated nutmeg

How to Make Manisa Bohça Kebab Recipe?

  • Start by roasting the meat. Add 1 tablespoon of oil into the pot, when the oil is hot, put the meat on it and start roasting. When the meat releases its water and collects it again, fry it for another 2-3 minutes and set it aside.
  • Chop the onions for food. Start sautéing in 1 tablespoon of oil. Add the butter after 3-4 minutes.
  • Then finely chop the garlic and add them too.
  • After sautéing for 1-2 minutes, add the tomato paste and fry until its light smell disappears.
  • Chop the tomatoes into small pieces. After the smell of the tomato paste disappears, add it.
  • Turn the heat down to low and wait for the tomatoes to soften. When it softens slightly, add salt and pepper.
  • Add the meat you roasted before, add 1/2 cup of water and let it simmer until the meat becomes soft.
  • Add the peas that are close to absorbing their water. When the water is completely absorbed, remove it from the stove.
  • Prepare the crepe mixture by mixing all the ingredients together.
  • Cook the crepes in a non-stick pan over low-medium heat.
  • On the other hand, melt the butter, add the flour by sifting it and roast the flour with a whisk. When the flour smells and turns yellow, add the milk slowly while whisking.
  • Add the bay leaf into it. Continue whisking until it boils.
  • When it boils, stir it. Add salt and spices and cook for another 5-6 minutes. Don't forget to remove the bay leaf before use.
  • Preheat the oven to 190 degrees.
  • Get a large bowl. Place the crepe into the bowl so that the edges hang out. Add 2 tablespoons of the filling and collect the crepes hanging from the edges of the bowl over the mixture. Fasten it with a toothpick and place it in a baking dish with the folded side down.
  • After preparing all the bundles, pour béchamel sauce over them all.
  • Bake in the preheated oven until the béchamel sauce is lightly browned.
