You will love this local dish made with eggplant. The most important feature of meftune is that it has a 2 to 1 rule. "What is this?" If you are going to say; If you are using one kg of eggplant, you add two kg of tomatoes. The dish does not need extra water, it is cooked entirely with the tomato's own juice. None of the ingredients are added to the pot raw, without pre-cooking, and cooked in this way.

 
Ingredients for Meftune Recipe
  • 400 grams of lamb meat with bones
  • 3 large eggplants
  • 9 large tomatoes
  • 1.5 tablespoons (heaping) tomato paste
  • 1 tablespoon (heaping) pepper paste
  • 8 cloves of garlic
  • 1/2 tea glass of oil
  • 1 glass of sumac (to be soaked in 2.5 glasses of warm water for at least 3-4 hours)
  • 1.5 teaspoons of salt

How to Make Meftune Recipe?

  • First, cut the eggplants into four lengthwise and then cut them into cubes so that they are not too large. Likewise, let's chop the green peppers for sautéing, neither too large nor too small.
  • Let's peel the tomatoes and cut them into cubes. Let's crush the garlic in a mortar. (You can grate it with a small grater if you want.)
  • Add raw meat, pepper, eggplant, tomato paste, tomato and grated garlic to the pot, respectively. Sprinkle salt and oil on top.
  • Turn on the stove and add sumac juice filtered. After closing the lid and bringing it to a boil, cook it over medium heat for about 30 minutes. We do not mix the food.
  • When the meat is cooked, the meal is ready. It is served after resting for half an hour. Enjoy your meal.
