Ingredients for Mushroom Meatballs Recipe
  • 150 grams of mushrooms
  • 1 small zucchini
  • 1 small onion (finely chopped)
  • 2 cloves of garlic
  • 4 tablespoons of olive oil
  • 4 tablespoons finely chopped parsley
  • 3/4 cup boiled kidney beans
  • 3/4 cup breadcrumbs
  • 1.5 teaspoons of salt
  • 1 teaspoon cumin
  • 1 teaspoon (wiping) black pepper
  • 1 teaspoon of chili pepper

How to Make Mushroom Meatballs Recipe?

  • Remove the stems of the mushrooms and chop them into very small cubes.
  • Grate the zucchini using a fine grater and squeeze out excess water. Crush the garlic.
  • Transfer the olive oil, garlic, very finely chopped onion, mushrooms and then the zucchini into a pan. Saute it well.
  • Remove from the stove and warm slightly. Then, crush the kidney beans in a deep bowl or blend them.
  • Add the vegetables and mix by mashing lightly.
  • Add breadcrumbs, salt, finely chopped parsley and spices to the mixed vegetables.
  • Mix well and obtain medium-thick meatballs.
  • Transfer these meatballs onto a baking tray lined with baking paper and brush them with olive oil.
  • Bake both sides for 10-15 minutes at 180 degrees.
