Ingredients for Original Uzbek Pilaf Recipe
  • 1 water glass measure of oil
  • 500 grams of lamb cubes
  • 3 onions _
  • 5 carrots _
  • 2.5 cups of rice
  • 3 heads of garlic
  • 1 dried hot pepper
  • 1 teaspoon cumin seeds
  • 2 teaspoons of salt
  • 1 teaspoon black pepper
  • 1 liter of hot water

How to Make Original Uzbek Pilaf Recipe?

  • Before making rice, chop the onions into thick half-moon shapes and the carrots into medium-thick strips (batons).
  • Wash the rice until the starch runs out and leave it to soak in warm water. Peel the thin outer skins of the garlic.
  • Heat the oil in a large pot and fry the meat until it turns dark. Strain the meat and take it out of the pot.
  • In the remaining oil, first fry the onions and take them out, then fry the carrots until they take color.
  • Put the fried meat and onion on the roasted carrots and mix. Add the garlic, dried hot pepper and cumin seeds to the pot by rubbing them in your palm and finally add half the salt and mix.
  • Put enough hot water in the pot to slightly exceed the level of the ingredients, lower the heat, cover the pot and cook for about 30 minutes until the meat is tender.
  • When the meat becomes soft, set aside the garlic and pepper, strain the rice and place it in the pot to cover the ingredients.
  • Put salt, black pepper, garlic and dried pepper on the rice and make a few holes with the back of a spoon. Finally, add a small amount of hot water to the level of the rice and close the lid of the pot.
  • When the rice absorbs the water, turn off the stove. Cover the rice with a cloth and let it brew for 25-30 minutes.
  • Before serving, separate the garlic and pepper, turn the rice upside down on a large plate or tray, add the garlic and pepper again and serve. Enjoy your meal.
