Ingredients for Osso Buco Recipe
  • 4 veal shanks (ossa buco)
  • 1 onion _
  • 1 carrot _
  • 1 celery stalk
  • 1 cup canned tomatoes
  • 1 tablespoon tomato paste
  • 1/2 cup red wine (or water-grape vinegar mixture)
  • 1 sprig of rosemary
  • 1 bay leaf
  • 3 tablespoons of flour
  • 2-3 glasses of water

How to Make Osso Buco Recipe?

  • Sprinkle plenty of salt and pepper on the veal shanks. Put the flour on a plate (add some salt and mix) and dip the shanks into the flour.
  • There should be a thin layer of flour on it. I used a cast iron pot, otherwise get a shallow pot.
  • Heat the sunflower oil (about 2 tbsp) thoroughly. Seal the shanks front and back over high heat. Place on a plate with napkin strips.
  • In the same pot (if it burns too much, wipe it with a napkin). Saute the chopped onion, carrot and celery stalk in olive oil.
  • Add tomato paste and fry. Add wine or vinegar water and cook over high heat. Add tomatoes, cook with the lid closed over low heat for 10 minutes. Add bay leaf and garlic.
  • Place the shanks on top and add enough water to cover them slightly. Close the lid and cook for 1 hour on the lowest heat. Add thyme and rosemary and cook in the same way for another hour.
  • Remove the shanks (also bay leaves, thyme and rosemary) and grind the sauce in the pot with a hand blender. Put the shanks in it and close the lid. Cook on lowest heat for another 30 minutes. Enjoy your meal.
