For tomato sauce:

How to Make Oven Baked Bostan Kebab Recipe?

  • Peel the eggplants and cut them in half, hollow out the insides and set them aside.
  • Soak the carved eggplants in salt water for about 15 minutes to remove the bitter juices.
  • Meanwhile, for the stuffing, chop the onion into cubes and fry it in olive oil until it turns pink.
  • Then add finely chopped peppers and fry well. Add the minced meat and continue roasting until it releases its water and absorbs it again.
  • After the minced meat is roasted, add the spices, mix, turn off the heat and set aside.
  • For the tomato sauce, grate 2 tomatoes, add the tomato paste, finely chopped garlic and their water and mix well.
  • Finely chop the insides of the eggplants and fry them in a separate pan with 2 spoons of oil.

  • Bake in a preheated 200 degree oven for about 30 minutes.
  • When the eggplants are cooked, take them out of the oven, fill them with the mixture you prepared, and share the tomato sauce you prepared on top.
