In the Antep region, the sour purslane soup or pirpirim vaccine dish, known as pirpirim, is prepared with purslane. Purslane, a green that is consumed frequently by the public, appears in many different dishes, especially when it is fresh and crispy. This time, one of the richest flavors of Gaziantep is here for you!
Pirpirim is not in the vaccine! We have prepared this vegetable recipe with meat for you, together with chickpeas, bulgur, black-eyed peas, lentils and purslane. If you wish, you can make it without meat and use different legumes. It can also be prepared as a soup. Bon appetit in advance!
- 500 grams of cubed beef
- 4 tablespoons of olive oil
- 1 tablespoon pepper paste
- 1 tablespoon tomato paste
- 1 onion _
- 5 glasses of water
- 1/2 cup green lentils
- 1/2 cup black-eyed peas
- 750 grams of purslane
- 1/2 cup boiled chickpeas
- 1/2 cup bulgur for rice
- 1 tablespoon sumac syrup
- 6 cloves of crushed garlic
- 1.5 teaspoons of salt
- 1/2 tea glass of oil
- 1 teaspoon of ground red pepper
- 1 teaspoon dried mint
How to Make Pirpirim Vaccine Recipe?
- After adding olive oil to your slightly heated pot, add your diced beef.
- Roast until the meat changes color.
- Add pepper and tomato paste and continue roasting.
- Add the onions you diced into the pot and continue roasting.
- Roast all the ingredients in the pot until they are well combined, then add 5 glasses of water.
- Cover the pot and continue cooking until the meat is tender. At this stage, check the water level and add hot water to the meat when necessary.
- After your meat becomes soft, add green lentils, black-eyed peas and chopped purslane to the pot one by one. After adding each ingredient, stir the pot to spread it.
- Then add the bulgur for rice and the chickpeas you have boiled before.
- Add sour sumac, salt and crushed garlic, mix once more, cover the pot and let it cook over medium heat.
- After the legumes and grains are thoroughly cooked, add mint and ground red pepper to the heated oil and add it to the boiling rice soup in the pot. Your Pirpirim vaccine is ready to serve, enjoy your meal!
