This delicious kebab from the Antep region is prepared with fine bulgur and minced meat. In fact, it takes its name from bulgur. In Gaziantep, fine bulgur is called simit. In the Kilis region, this kebab is called "Oruk". It is a pure muhlis Antep recipe, be sure to save it.

 
Ingredients for Simit Kebab Recipe
  • 1 kilogram of fatty minced meat
  • 1.5 cups fine bulgur
  • 1 head of garlic
  • 2 tablespoons of mint
  • 1 teaspoon tomato paste
  • 1 teaspoon of pepper paste
  • 1 teaspoon of chili pepper
  • 1 teaspoon of black pepper
  • 1 teaspoon cumin
  • 1 teaspoon salt

How to Make Simit Kebab Recipe?

  • Simit (thin bulgur) is soaked in hot water and puffed. When it cools down, all other ingredients are added and kneaded well. (I kneaded it in the stand mixer on low speed for about 10 minutes.)
  • Let the kneaded meatballs rest for 1 hour. The bottle is attached by wetting the hand with slightly carbonated water.
  • It is cooked on the barbecue. For those who do not have access to a barbecue, place the skewers on a baking tray lined with baking paper and bake in a preheated oven at 200 degrees for 25 minutes. Be careful to skewer the meatballs thinly. Enjoy your meal.
