Lamb kapama is a simple but delicious dish with many different interpretations, made from lamb meat and flavored with vegetables, as the name suggests. It is appreciated that it is cooked softly and is very delicious.

Although there are several different interpretations of where its name comes from, the most plausible one is related to its cooking technique. It is called lamb kapama because it is cooked slowly by placing the lamb meat in the middle of a cooking container and covering it with another heat-resistant container.

Considering that there is no need to apply such a searing method in the pots we have nowadays, we will present you with a modernized lamb searing recipe that you can easily prepare at home. Ingredients for Softly Cooked Lamb Calamari Recipe
  • 4 pieces of lamb meat with bones
  • 12 shallots _
  • 2 stalks of celery
  • 1 carrot _
  • 2 cloves of garlic
  • 1 tablespoon butter
  • 1 teaspoon of oil
  • 1 teaspoon tomato paste
  • 1 teaspoon of salt (can be reduced or increased)
  • 1/2 teaspoon black pepper
  • 1 teaspoon of chili pepper (optional)
  • 1 cup broth or vegetable broth

For marinade:

  • 1 tablespoon olive oil
  • 1 pinch of rosemary
  • 1 teaspoon of vinegar
  • 2 cloves of garlic

How to Make Softly Cooked Lamb Stuffed Recipe?

  • At least 2 hours before you start cooking the meal, mix the marinade ingredients and lamb meat in a food bag and leave it to rest in the refrigerator. This process is not mandatory, but it makes the meat more delicious.
  • Take the meat out of the refrigerator 15 minutes before cooking.
  • Coarsely chop the celery stalks, cut the carrots into large slices, finely chop the garlic and peel the shallots.
  • Put half the butter and oil in the pot and heat it.
  • Place your meat on the hot oil, cook for 2 minutes on each side and set aside.
  • Put the rest of the oil in the same pot, add the vegetables and sauté for 3-4 minutes.
  • Add tomato paste and sauté for another 2 minutes.
  • Add the meat, add the broth and spices and stir.
  • If you are going to cook it in a pressure cooker, cook it for 25 minutes after the whistle comes off; if you are going to cook it in a normal pot, check the water and cook it for 1 hour and 15 minutes.
