- 250 grams of beef ribs
- 50 grams of tallow
- 40 grams of stale bread crumbs (finely ground) (about 1 cup)
- 20 grams of red onion (1/3 piece)
- 2 grams of garlic (1 clove)
- 5 grams of salt (1 level tablespoon)
- 5 grams cumin (2 heaping teaspoons)
- 2 grams of black pepper (1 heaping teaspoon)
How to Make Tekirdağ Meatball Recipe?
- After removing the sinews, the meat is pulled through the meat grinder twice. Grate the onion and garlic on the small side of the grater and crush them in a mortar until they are thoroughly crushed.
- Put all the ingredients, including minced meat, into the kneading bowl. Knead for at least 10 minutes. After kneading, let the meatball dough rest in the refrigerator at +4 degrees for at least 16-18 hours.
- The next day, knead the rested meatballs for 2-3 minutes. You can shape the meatballs into cylinders either with a squeeze bag or by hand. Shape the meatballs into 12-15 grams and place them on a plate.
- If you want, you can cook and serve the meatballs immediately. If you want, you can store it in the freezer at -18 degrees and cook it after thawing it a little.
- For those who can afford it, cook it on a barbecue, or for those who cannot, cook it in a cast iron pan over medium heat for 6 minutes, turning frequently every 30-40 seconds. You can serve it with roasted peppers, tomatoes, onion salad and hot sauce.
