Tray kebab , also known as lahm-ı sini, is just one of the delicious dishes from Antakya. Although it looks like a giant vegetable meatball on the tray, it is actually a special kebab in every way. Meat and vegetables are carefully selected, all these ingredients are cut into small pieces with a shredder and a wonderful taste emerges. The important thing at this point is not to water any vegetables and to give all the water to the kebab as flavor while cooking.
The quality of the meat and the single grinding of the minced meat are the factors that make the kebab taste much more delicious. If we cannot go to Antakya and eat tray kebab on site, should we be deprived of this taste? Of course we shouldn't stay.
- 1 kilogram of minced meat (mixed beef/lamb as desired)
- 1 onion (finely chopped )
- 1 bunch of parsley (finely chopped)
- 2 green peppers ( finely chopped)
- 3 cloves of garlic (crushed)
- 1/2 teaspoon cumin
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon chili pepper
- 4 tablespoons butter (melted)
- 1.5 tablespoons of pepper paste
- 1 glass of water (to dilute the pepper paste)
- 1 tomato (for topping )
- 1 pepper (for topping )
- 1 red pepper ( for topping)
How to Make Tray Kebab Recipe?
- For tray kebab, mix the minced meat, onion, parsley, green pepper, garlic, cumin, salt, black pepper and chili pepper in a bowl or on the tray you will cook it on and knead well.
- When the ingredients are thoroughly mixed together, spread the minced meat mixture on a round baking tray and flatten it by pressing it with your hands.
- Slice it into 8 slices with the help of a knife. Pour the melted butter over the kebab and spread it all over with the help of a brush.
- Mix pepper paste and water and pour the mixture over it.
- Arrange the peppers you cut in half lengthwise and the tomatoes you sliced on top.
- Bake in the oven at 190 degrees for 40 minutes and serve the tray kebab hot. Bon appetit!
