Tray kebab, prepared with low-fat ground beef, garlic, green peppers, capia peppers, tomatoes and parsley, may be the reason you go to Antakya. It is best eaten by hand with pita bread or lavash, also known as lahmisini or sini kebab. In Antakya, kebab, which is usually prepared in butchers and cooked in wood ovens opposite, is eaten with shepherd's salad.

Ingredients for Tray Kebab Recipe
  • 500 grams low-fat ground beef
  • 2 medium sized green peppers
  • 2 medium size capia peppers
  • 1/2 large tomato
  • 1 clove of garlic
  • 1/2 bunch of parsley
  • 1/2 teaspoon salt
  • 1 teaspoon cumin
  • 1 teaspoon black pepper

For decoration:

  • 1 small tomato
  • 1 small size onion
  • 2 green peppers

For the sauce:

  • 1 tablespoon tomato paste
  • 3 tablespoons of water
  • 1 tablespoon olive oil

How to Make Tray Kebab Recipe?

  • Cut the green peppers and capia peppers in half, remove their seeds, and chop them into small pieces.
  • Finely chop the parsley and garlic. After peeling the tomato, slice it. Finely chop all the ingredients you have chopped.
  • Add low-fat ground beef, salt, cumin and black pepper and mix the chopped ingredients and knead by hand.
  • Press and spread the kebab mixture you have prepared on a medium-sized tray.
  • After removing the ends of the green pepper and tomato, divide them into four equal parts. Cut the peeled onion into quarters.
  • Place onion, tomato and green pepper slices on the tray kebab you prepared.
  • Mix tomato paste, water and olive oil in a small bowl and pour over the kebab.
  • After cooking the kebab in a preheated 200 degree oven for 30 minutes, slice it hot and share it with your loved ones.
